  • Dried Oregano
  • Dried Parsley
  • Ground Ginger

Homemade Peri Peri Seasoning (2)

Is this Peri-peri seasoning spicy?

The level of spice is completely up to you here! You can change the amount of cayenne pepper in the recipe to suit your family's tastes.

I make this quite mild because guaranteed if I serve spicy food my youngest will stick his tongue out and try and cool it in his water glass, which will lead to my eldest saying "It's not spicy, you are just being silly" and before I know it I have feuding brothers on my hands and spilled water. (anyone else's family dinner go that way? Please??)

Traditional Seasonings

The recipe uses cayenne pepper to get its spice, traditionally this would have been ground Piri-Piri pepper. I find this much harder to find so I add cayenne as a substitute.

How to use Peri peri seasoning?

This mixture is wonderful rubbed into chicken or steak. Or try sprinkling it over veggies before you roast them. My Peri peri traybake is coming tomorrow!

It also makes a great seasoning for stirring through mayonnaise to make a quick and easy dip for your fries!

Enjoy x

Could I use fresh parsley and coriander since I don’t have any dried?

    • Claire McEwen says

If you don't have dried herbs would leave them out of the seasoning blend, and then when you use it, add some finely chopped fresh herbs. Adding fresh herbs to the blend will make everything damp.
      Hope that helps 🙂

Delighted with this! Substituted cinnamon for cardamom as I'd run out. Don't know how much difference it made but it was fabulous. I mixed it into flour and used it to coat chicken livers - it worked a treat. Son is veggie so did button mushrooms for him and served both with crusty bread. So quick, easy and tasty. This is set to be a 'go-to' weekday dish. Going to try with courgettes and halloumi next...

That is WAY too much cardamom - totally overpowers everything else

    • Claire | Sprinkles and Sprouts says

      Hi Nigel,
Did you make the spice mix? I am wondering if you used tablespoons for the cardamon instead of teaspoons?
The cardamon is 2 teaspoons in a mix that contains 45 teaspoons of spices, we don't find it overpowers it at all.
But that is the beauty of homemade spice blends, you can change it to suit your tastes. 🙂

    • Claire McEwen says

      Hi Cheryl,
You can definitely leave out the sugar. It won't taste quite the same as Nando's but it will still be delicious 🙂
      Hope that helps

Can't wait to make this. Having experienced Nando's wonderful chicken while in South Africa, I miss that scrumptious flavor. We can now buy a bottled Peri Peri sauce in some stores here, but I prefer to do it myself...and avoid the questionable additives. Thank you so much for sharing this recipe.

This recipe can be used with fried chicken after frying?

    Reply

    • Claire McEwen says

      Hi there,

You could definitely use it as a seasoning after you have cooked the chicken, like a seasoning salt.
Or mix it with some oil and use it before you cook the chicken.
      Both will work.
      Hope that helps

Thanks for sharing this! I've already given your recipe 5* as I know what it's going to taste like before I use it this weekend (I have 17 years catering experience and I'm always experimenting).

I've been using the same 'rub' for 10 years so I think it's time to change and use yours 😉

I have all but one item in my 'spice' cupboard.
